Creating a menu is a unique way to spice up your Easter. It is just a quick and easy thing, but it seems so fancy. I decorated it with some flower flourishes to create a spring look using Tombow Dual brush pens. Feel free to add any decorations you want: bunnies, chicks or whatever suits your occasion. It is the perfect thing to do to put a little extra thought into Easter dinner!
Here are two of my favorite dishes:
1. Half baked Harvest Berry French Toast:
I combined two French toast recipes from Half Baked Harvest (one of my favorite blogs) to make this. The first, https://www.halfbakedharvest.com/berry-and-cream-cheese-croissant-french-toast-bake/. I mean, whoever had the idea of making French toast with croissants is a genius. It is absolutely DELICIOUS. For the jam, I used raspberry. I also made the first part of the recipe the night before and let it sit soaking in the fridge overnight. The recipe was so simple and easy to make and it is the perfect spring brunch option. To make it even tastier, I used the lemon lavender sugared raspberries from https://www.halfbakedharvest.com/whipped-cream-cheese-stuffed-french-toast-with-raspberries/ to add on top. These were the perfect addition. Honestly, the French toast was probably the best I've ever had!
2. The Thai Quinoa:
I want to start off by saying this is KILLER Quinoa. The snap peas and peanuts add the perfect crunch. I got the recipe at https://cookieandkate.com/thai-peanut-quinoa-salad-recipe/. Keep in mind, the dressing was very thick, so I had to whisk in a bit of water to loosen it up. You would never guess that this delicious salad is packed with protein, fiber, and iron. It was a star on the menu!
