Lazy Morning Cinnamon Bun Pancakes



My heart leapt the other day when I glanced out the window to watch micro-snowflakes drift from the clouds. They were so small I almost mistook them for specks of dust, but sure enough it was snow. I can only imagine the reactions of different people upon seeing the first snow. My brother probably scowled because he now has to dress in a winter coat and pants instead of shorts and a t-shirt. My mom probably frowned because it would now take her five extra minutes to slowly drive our car to the top of the driveway. My dad probably put his head in his hands because it was shoveling season. But instead of worrying about the winter to come, I became filled with excitement. It was now officially sweater weather, the season to curl up in a furry blanket next to a stack of cinnamon swirl pancakes.


I recently stumbled upon perhaps the most apt word to describe this season: Hygge.

What could be better? Winter is my favorite time of the year because of the cozy outfits, warm fireplaces, and, most of all, comfort food. Here is a perfect comfort food to get you excited for the start of winter!


Two of my favorite things are cinnamon buns and pancakes. So you you can probably imagine what I thought when I found out there was a mix of both.....

This original recipe only includes three ingredients. It is so simple to make and perfect for a lazy day morning. Quick and easy, these pancakes taste just like cinnamon buns! To go above and beyond, you can try a cinnamon bun glaze to top off the pancakes instead of maple syrup! I haven't had the chance to try that yet but I’m sure it would be delicious!


INGREDIENTS:

1 stick (8 tbsp) butter, melted

1/2 cup brown sugar

1 tbsp cinnamon

1/2 tbsp vanilla extract

Any pancake mix or recipe- this cinnamon swirl mix makes enough for 12-14 pancakes!


DIRECTIONS:

Combine all ingredients in a medium bowl. Pour into piping bag and let sit for 8 minutes for butter to cool and for mixture to become less runny. Once pancakes are poured in the pan, pipe a swirl of mixture and flip pancakes. Cook pancakes according to recipe.
