How beautiful does this cake look? It is so sophisticated and tasteful but in reality it's a ‘piece of cake’. We had guests over and they were blown away by how pretty it was. This is my favorite type of project- you don't need any fancy materials to make it stunning! It is quick to make too, and you could use the same decorating technique used with this cake to decorate cupcakes. It is perfect when you are stuck and need an easy dessert to whip up.
You will notice in the ingredients list I included lemon instant pudding mix. When baked in with the cake, it alters the density and creates a moister, fluffier, and lighter cake. It makes all the difference, and no one will know it started from a simple cake mix!
Ingredients:
One lemon cake mix (plus whatever ingredients the cake mix calls for. One cake mix makes two layers of cake)
2 cans of buttercream frosting
1 bouquet of grocery store carnations- following one color scheme. Thanks to Costco- we got flowers that both looked expensive (but were only around $10) and lasted a while.
Lemon instant pudding mix
Directions:
Mix and bake the lemon cake in two layers according to the directions on the box. However, when mixing the dry ingredients, add in the lemon instant pudding mix. Then add in the wet ingredients and follow the rest of the instructions on the box.
Once the two layers of cake are baked and cooled according to the box, it is time to frost it. Because typically, cake rises in the center, it is sometimes hard to frost because of the uneven sides. This is why you need a lot of frosting- so that you are able to fill in the sides without there being gaps. Place the bottom cake with the round side up and frost it. Next place the top cake on top with the round side on bottom. This will create a flat top where the flowers can rest. However, there will be gaps on the side. Spoon frosting into a piping bag and pipe in the sides to fill in the gaps. Then frost the top of the cake, making sure it is textured and swirled.
Next: the flowers! Cut the flowers right under the green part of the bud, where the stem starts. Be sure not to cut into the bud because then the petals will fall out. Place them in a half-moon shape along one side of the top of the cake, starting with the outside of the shape then building on the center before filling in the gaps with remaining buds. You want to create volume but not so much that the cake looks uneven. To even it out, add a few flowers and buds coming around the other side of the middle layer.
