There is one ingredient that separates this grilled cheese from any other grilled cheese on the internet: Virgilio's bread dipping oil. Let me back you up... My family spends a lot of time in the summer in Rockport, MA. The next town over is Gloucester, MA. One of our favorite places in Gloucester is Virgilio's, an Italian sandwich store and deli. It is a hidden gem in the town and everything there is delicious! We just discovered their bread dipping oil- possibly the best thing in the whole store. It is perfect to eat as a snack with a slice of bread, but this time we put it our grilled cheese! We use Virgilio's oil but I am sure any other bread dipping oil will work. The oil absorbs into the bread and all the herbs, red pepper flakes, and spices mix in with the cheese.
Ingredients:
Makes 1 grilled cheese sandwich
2 slices Ciabatta bread
1-2 tbsp butter
Bread dipping oil
4 thin slices mozzarella or 1/2 cup shredded mozzarella
Directions:
In a medium skillet, melt 1-2 tbsp butter.
On each slice of bread, spread a tablespoon of the bread dipping oil. Then on one slice of bread spread out the cheese.
Transfer the slice of bread with the cheese to the skillet. Press the other slice of bread on and apply pressure so that when the cheese melts the bread will stick together.
Once golden brown on one side, flip to the other side so both sides are evenly cooked. Once the cheese has melted, remove from heat.
Slice into quarters and enjoy!
